Hi! This is Kim, one of Dustin’s contributors. We tried a new recipe today for a gluten-free pancake. It actually tasted more like a biscuit. We found the recipe on www.workoutmaster.com and you can watch the video of how to make them here. The final product received mixed reviews from our kids, but I thought they were pretty good.
1.5 lb of 1% cottage cheese – one container (I strained this with cheese cloth, to get rid of some of the liquid) – 3 whole eggs – 6 TB granulated sugar – 2.5 cups of coconut flour and 2.5 TB of coconut oil for frying
Mix all of the ingredients with a hand mixer, form in to patties and fry in coconut oil until brown and crispy on the edges. The recipe made 18 – 3 in pancakes.
We served these with butter and strawberry preserves, some fresh fruit and some of my husband’s family’s homemade sausage.
