In our house, it gets difficult to find a recipe that everyone can eat. My husband and son can not eat gluten. I modified a recipe for pumpkin pie, and made it so we all could enjoy it. This recipe is not only gluten free, it is also dairy free and sugar free.
1.5 cups walnuts, ground up in a food processor – pat into a pie plate
2 cups pumpkin
3/4 cup xylitol + 1 TB stevia
1/2 tsp sea salt
1/2 tsp ginger
1/2 tsp cloves
1 tsp cinnamon
1 3/4 cup coconut milk
Mix together and pour on top of walnuts. Bake in 350 degree oven for 1 hour, or until knife inserted comes out clean.
We chose not to keep it dairy free, and topped it with some organic, grass fed cream.
BUT WAS IT GOOD????
